Turkey and Sausage Meatloaf

Hola everyone. Meatloaf has been on my mind this past week. When I get back on the wagon I always seem to forget how to stock my fridge. I end up eating 1 piece of fish and some veggies and I wonder why I'm STARVING 2 hours later. So I've gone to the paleo podcasts for some advise. Robb Wolf is like numero uno for paleo advise but I can only take so much of his blog. It's like listening to an hour long bro fest at a Slayer concert at times but it has some really good info. I can only handle it if I've just listened to dubstep or backsquated like 250#. Which is never so I listen to it after over stimulizing my nervous system with dubstep.

The podcast I have been obsessed with is Sarah Fragosa and Jason Seib's podcast 'Paleo Lifestyle and Fitness Podcast'. I just bought Jason's book  on Amazon because I can't get enough of the podcast. Their advise is simple and it really makes me feel like I can stay on the paleo wagon. They give advise like "hey if you really like meatloaf and sweet potatoes...eat meatloaf and sweet potatoes". I don't have to have 7 gourmet paleo dinners planned out every week. If I really love ground beef (which I frickin do!) eat some ground beef! There whole thing is if it is easy and tasty they would rather have you eat that then eat some crap squeaky chicken and steamed broccoli and then binge on a pint of coconut ice cream and paleo cookies 3 hours later.

Which leads me into "paleo" and "gluten free" paleo food. Just because something says "paleo" or "gluten free" doesn't mean it's a free for all. I'm talking about all the paleo cinnamon rolls and paleo brownie recipes I drool over on the google machine. I mean, don't get me wrong. I have a loaf of gluten free bread in the fridge and 2 half eaten boxes of gluten free chocolate cookies on my counter. This stuff isn't diet food and a fix for my hunger. Sugar is sugar no matter what you call it. Eating paleo donuts is not considered eating good paleo. It's fun but keep it in check folks. Let me tell you a story..or continue my story from my previous post.

I went to whole foods last week and ate a half box of gluten free cookies and 4 chocolate haystacks. Don't know what those are? Go to whole foods. They are amazing.

Did I feel awesome after eating my whole foods  "gluten free" binge? No. Absolutely not.

I didn't feel awesome because I didn't eat paleo. I just ate a crap ton of stupid sugar and rice flour. Sure it's better than gluten, but it's still sugar. AND If you didn't know already, sugar and gluten make me feel cRaZy inside. My chest tightens, my tongue feels like it's lifting weights. I don't get it...I just know I'm trying to balance my crap out. So for now, I'm going to hold off buying "paleo" food in packages even though it has the gluten free stamp on it. Instead I'm going to fill up on food I know I LOVE. Like Meatloaf. Check out my awesome recipe. It makes a ton so you can eat it for breakfast, lunch, and dinner for a couple of days. heaven.

Huevos Rancheros

Hello everyone!! I'm back from the weekend. Alive and moving..barely. I ran a half marathon on Saturday without training. I wouldn't recommend this to anyone. I was able to finish but the rest of the day was shot. I couldn't move. My friend Jen gave me one of those bean packs that you heat up in the microwave and put on your muscles. I nearly scalded my skin off trying to sooth my muscles. It was excruciating.

So what I have learned from my experience is that you shouldn't run a half marathon without training first and that crossfit is better than everything ever invented. The end.

Also the superbowl was last night. Obvi I ate a ton of tortilla chips. Also! My friend Jen and I made these stupid good dessert quesadillas from this blog. I'm not huge on quesadillas but this dessert quesadilla was dang good. These were definitely not paleo so don't hate me. If you are going to have a "cheat" please try these out. What you do is cover the tortillas with butter and cinnamon sugar. Then in between the two tortillas you spread peanut butter, cinnamon sugar, chocolate chips, peanut butter chips, and honey. Then you cook them in a pan or a handy dandy quesadilla maker. Which Jen has because she's awesome. It even cooks little cactus shapes into your quesadilla.

Since I ate like crap last night I decided to have a very paleo breakfast. I took some of that leftover mustard chicken and kale (yeah I know it's a little old but I'm not dead yet) and cooked it with scrambled eggs. Then I took the leftover salsa and guac from our superbowl fiesta and dumped it over the chicken scrambled eggs. I love huevos ranchoros so much. It makes me feel happy inside.

Main Ingredients:
1/2 tbsp coconut oil
Leftover meat of your choice
2 eggs (3 if you are feelin crazy)
Salt/Pepper to your taste
Guacamole

Step 1: Add coconut oil to pan on med. heat
Step 2: Add leftover cooked meat of choice and heat up
Step 3: In a bowl add your eggs and salt/pepper and scramble
Step 4: Pour your scrambled eggs over your meat in the pan
Step 5: Stir up all together and cook until eggs are done
Step 6: Plate your egg/chicken scramble
Step 7: Pour salsa and guac all over your egg/chicken scramble and EAT

Mustard Baked Chicken Thighs

Ok so these chicken thighs can pretty much be slathered and baked on top of anything and everything. That's what I like about chicken, you put stuff on it and throw it into the oven until you feel like taking it out. This recipe includes 15 chicken thighs, but feel free to cut it down to a normal size portion if you really want to. No one truly needs to eat 15 chicken thighs in one sitting but I like to make a crap ton for lunches during the week.

Anywho, I decided to bake the chicken thighs on top of a bed of broccoli and kale. The kale is there because it was about to go bad any day now. So I wanted to use that up stat. The broccoli was actually purchased by me (shocker, broccoli makes me gag). I know, I know, why would I buy broccoli if I hate it? I was feeling crazy and veggies are my "thing" this week. I've noticed I eat like a crap ton of protein and very little veggies and things need to change.

This is what I normally eat...
Eggs and bacon for breakfast and for lunch I eat meat. Sometimes I'm not even sure what kind of meat it is. Especially if it was cooked in the crockpot the night before. And all ya'll know what I'm talking about with the crockpot. You could put a pound of cat in there and it'll come out looking like pork mojo. I don't know why, magic.

As for the mustard sauce, that was my boyfriends doing. So if you don't like it you can send him your hate mail.
