Lunchtime Fish

Yay it's Friday!! I don't know what I'm going to do this weekend but I hope it has something to do with being outside. Even though it's summer pretty much every day in Florida it still feels like spring right now. I want to go to the beach and run around outside like a crazy person. The weather is so freakin nice. Sorry for all my friends still dealing with snow. What's up with that? Blizzards in April? Super weird. Start your prep kit for the apocalypse.

Anyways, back to Friday. So far today I made some awesome fish and asparagus for lunch. "You have a kitchen at work?!" You may ask...no not really. I decided it was a great idea to smell up my apt at 7:30 in the morning by cooking some fish to take to work. The cats totally loved it. They were meowing all over the place looking for fish...those stupid kittehs.

Fish turned out pretty good....and dry. I only overcooked it by like 5 minutes but whatever. The seasonings were perfect. I'll have to redo the recipe later and actually learn how to cook fish. Nobody likes super dry fish...or chicken. Ugh squeaky chicken.

Anyways...

I went to Whole Foods last night and decided to buy every gluten free bread and cookie in the store. Not sure how this one will go. I doubt I'll feel any less crazy eating a half box of gluten free cookies then I do eating a serving of pasta. But whatever. Life's a journey and I wanted a cookie...or a box of cookies. I'll let you know how it goes.

Lunchtime Fish
Fish of choice (idk what kind...it's white)
Sprinkle of chili powder
Sprinkle of cumin
Salt/pepper

6 stalks of asparagus chopped in 3rds

Season both sides of your fish with seasonings and cook in a pan with some OO or coconut oil. Make sure you don't overcook it. I obviously did, so I'm not going to tell you how long to cook it for. Also it depends on the fish. Mine was white and that's all I remember. Wow I'm super observant.
